This might have been more interesting in concept than execution – blueberries! salsa! what could be bad? – but it wasn’t awful. It wasn’t awesome, either, but it was fun and a little exotic and colorful. I think it would be perfect for that pint of blueberries you get because hey, blueberries! and turns out to be not so sweet and fruit-like.
1 pint blueberries, coarsely chopped
1 medium shallot, finely chopped
1 jalapeno, mostly seeded and entirely minced
1 tablespoon fresh cilantro, chopped
1 tablespoon lime juice
1 teaspoon fresh ginger, minced
1/4 teaspoon salt
Combine ingredients and let sit at least a half-hour. It’ll be better the next day, though.
